Can I record just one window or one tab?

Yes. Pick a display, a window, or a single browser tab. On the desktop app, recording a whole display is what gives you cursor-follow zooms.

How are the captions made?

Transcription runs in your browser with Whisper. Tutorial audio, including anything you say about a customer, is not sent anywhere.

Can it record app sounds and system audio?

On the desktop app, yes, on macOS and Windows. In Chrome you can capture the audio from a tab you share.

What if I fluff a step halfway through?

You can pause and resume as often as you like, and the paused time is folded out of the final length. For a step you want to redo, keep rolling and cut it out on the timeline afterwards.
